  • First, you’ll need to pour the milk into a sieve lined with cheesecloth. The milk will naturally rise to the surface, so gather it up with the cloth and put it inside a bowl. This is called skimming off the top of your milk.
  • Next, place a heavy metal weight on top of your bowl and leave it for about 20 minutes until the whey has separated from the curds.
  • After you’ve skimmed off the whey, stir in salt and let it set for another 30 minutes.
  • Now it's time to make your paneer! Gather up a couple handfuls of cheesecloth, tie them together with some string or twine, and hang them over a pot of boiling water. Leave them there for about 3 minutes (or until they form a ball) then remove from heat and let cool for 5-10 minutes before using in any recipe.
