      In some parts of the world, mango (Mangifera indica) is called the "king of fruits". It is a stone fruit, meaning there is a large seed in the middle. Each flower is small, white, with 5 petals 5-10 mm long and has a slightly sweet scent.
     There are over 500 known mangoes, most of which ripen in the summer, but some are over-harvested. Fruiting takes four to five months from flowering to maturity, and ripe fruits vary in size, shape, color, sweetness and flavor quality depending on the variety. The fruits are yellow, orange, red or green depending on the variety. The fruit has an elongated stone, the surface is fibrous or hairy, and it is not easily separated from the pulp.
